The last night was one that certainly will always remember, in the best way ... and unless I have baptized the daughter of our dear friends Mark and Susie. It was the first time that we were having this great honor, they gave us the joy not only to live their puppy for all the months of pregnancy in which we never give it up .. holidays, movies, dinners, sea, laughter always and everywhere: a huge bond of friendship that certainly will keep us together wherever we live forever! This also gave us great joy to be alongside them yesterday at church and follow the path of spiritual growth of their small Cristina! Susi is a special friend to me, a friend known what I like to call our "brackets of Neapolitan life" ... a friend who welcomed me with open hearts in his land so sunny, full of 1000 facets and colors as is she. He gave me all his good since we first met, we immediately understood, we share many things ... I'll never stop to thank you, Mark, and now even their little girl, that makes us live ... indescribable joy for us is a special niece!
The baptism took place in the afternoon for lunch but I have not given up on my husband's delight with a risotto of my invention born from my few month ago, when returning from Sicily, my father prepared a parcel of his usual "Providence "with the typical products of our land ... idea this risotto, in fact, with the intent to make the most of these delicious oyster mushrooms
from my father bought a nice old man, who has produced in its ground, then from the producer to the consumer .... my culinary ideas ;)
INGREDIENTS
1 onion 1 large knob of butter
a bit of fresh chilli
4 oyster mushrooms 1 slice of bacon coppata
1 nut with porcini mushrooms
grappa 1 teaspoon saffron 1 teaspoon curry
for broth 1 cube vegetable
hot water as needed
for creaming
100 g mascarpone 30 g grated Parmesan
parsley
PREPARATION
I sauteed the onions in butter, with pepper
Then I browned the mushrooms, coarsely chopped
few minutes later I added the bacon into small pieces
I put the nut
I added a little water and I continued cooking.
Next I added the rice, toasting to good
I blended with brandy
I continued to cook the rice in the traditional way: with the wetting
hot broth as it absorbed
In a ladle of broth and the saffron dissolved I've paid in rice.
After I added the well mixed to curry
Once cooked, I turned off the stove and I proceeded with the creaming
My risotto looked like this 10 minutes after creaming
(keeping it in the pot with its lid closed well!)
Once again an experiment very successful who can enhance the flavor of the ingredients well blended with the other accompanying them!
